Milou's lentil salad

Our instructor Milou loves to cook, and we love to share her healthy, nutrient dense and vegan recipes with you!

The recipe below is one of her all time favourites, a greek lentil salad. Try it out for yourself and let us know what you think! :)

What you’ll need

For the salad

200 gr black beluga lentils (find at your local organic supermarket)

40gr fresh basil

100gr baby spinach

1/2 medium red onion

8 sun-dried tomatoes

15/20 kalamata olives

For the dressing

4 tbsp olive oil

2 tbsp red wine vinegar

1 tbsp tahini

1 tsp dried oregano

2 cloves of finely chopped garlic

1/2 tsp sea salt

Black pepper to taste

What to do:

Mix all the ingredients for the dressing in a bowl. Cook the lentils according to the package, meanwhile chop up all the ingredients for the salad. All that's left to do is to drain and rinse the lentils and combine them with all the ingredients and the dressing in a large bowl.

P.s. Like it spicy? Milou does! She tops the salad off with chili flakes. If you don't want your salad to be vegan, you could also add in some feta.
