Thomas' healthy granola

Thomas brings you his own granola recipe. Full of healthy fats, antioxidants and fiber. Caution: It might be addictive... ;-)

What you'll need:

Dry ingredients:

  • 100gr Almonds
  • 100gr Pecans
  • 100gr Walnuts
  • 50 gr Oats
  • 25gr Sunflower seeds
  • 25gr Pumpkin seeds
  • 10gr Flaxseed

Wet ingredients:

  • 3 tbsp Coconut oil
  • 3 tbsp Agave or Maple syrup
  • 3 tsp Cinnamon

Add ons:

  • Raisins
  • Hagelslag
  • Whatever you want

What to do:

  1. Chop up the almonds, pecans and walnuts with a big knife or by using your mixer. It's best to not make it to fine, so you'll end up with yummy chunks.
  2. Put the nuts in a big bowl and mix with the oats, flaxseeds, sunflower seeds and pumpkin seeds.
  3. Mix it all together with a spoon.
  4. Pre-heat the oven on 180 degrees celsius.
  5. In a small pan on low heat melt the coconut oil together with the syrup and cinnamon. Make sure it doesn't boil!
  6. Mix the coconut oil mixture with the nut mixture. The trick is to keep on stirring. It will get stickier and stickier so you want to make sure everything sticks together! Done mixing? Mix a little more ;-)
  7. Put some baking paper in an oven dish and spread out your mixture. Make sure you press everything together inside your oven dish, so you'll end up with big chunks of granola after baking!
  8. Bake your granola in the oven for 40 minutes. Stir and press together again half way through.
  9. Take your granola out of the oven and let it cool. Shake it up a bit and add your desired add ons. That's it! :-)
